I was browsing Facebook and came across another of those interesting recipes. I shared it to my timeline to try at a later date but then decided to cook it right away since it looked too good to pass up! With only a few ingredients required I actually had all the items on hand. It fit right in with our healthier eating menus which was a real plus. Paired with teriyaki salmon, it made a perfect and healthy meal. Although baked in the oven, I think it might have done well on the outdoor grill which is how we will try it next time.
4 medium, fresh zucchini, sliced in half
1/2 cup fresh Parmesan cheese, grated
1-2 tablespoons fresh rosemary & thyme, minced
smidge of olive oil
salt & pepper to taste
I used a variety of fresh herbs from our garden. I think whatever herbs you prefer would work as well.
Pre-heat oven to 350F, lightly brush both sizes of the zucchini with olive oil and place on a foil-lined baking sheet.
Mix cheese and herbs together in a small bowl and sprinkle over the zucchini along with salt and pepper to taste.
Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and browned.
Super easy and delicious!
