Yogurt and Cinnamon Apple Coffee Cake

I borrowed this from a  great blog I have followed.  Although it was not what I would consider a ‘guiltless’ dessert, it was certainly worth the indulgence. (You may want to check out her blog. She has some great recipes!

Yogurt and Cinnamon Apple Coffee Cake

1 1/2 cups vanilla yogurt

2/3 cup oil

2 tablespoons lemon juice (optional)

 1 cup sugar

3 large eggs

1 1/2 teaspoons vanilla

4 small tart apples, peeled, cored, and diced

2 1/2 cups flour

2 1/2 teaspoons baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

1/8 teaspoon ground nutmeg

2 1/2 teaspoons cinnamon, divided

1/2 cup brown sugar

2 tablespoons unsalted butter, cubed.

Preheat oven to 350 degrees.  Lightly spray with cooking spray, a 9×13″ baking pan. Mix together the yogurt, oil, lemon juice, sugar, eggs, and vanilla in a large bowl.

Fold in chopped apples.

(I used 3 large apples instead)

In a separate bowl, mix together flour, baking powder, baking soda, salt, nutmeg, and 1/2 teaspoon cinnamon.  Stir into liquid ingredients until no lumps remain. In a small bowl, mix the remaining 2 teaspoons cinnamon with the brown sugar and butter.

Pour half of the batter into the cake pan. Sprinkle half of the brown sugar mixture onto the cake, pour in remaining batter and sprinkle the remaining mixture on top of the cake. Bake 45-55 minutes until lightly browned.

Cool before serving.

Apple cake

I have a few recipes saved on my Facebook page and once again have decided to give some of them a try. This time, however, we have out-of-town guests so I will let them be the judge.

The first one I tried is: One Bowl Apple Cake.

Ingredients:

2 eggs

1/34 cups sugar

2 heaping teaspoons cinnamon

1/2 cup oil

6 medium apples

2 cups flour

2 teaspoons baking soda

In a large bowl mix eggs, sugar,  cinnamon,  an oil. Peel and slice apples. Add to mixture in bowl (coating as you go to keep the apples from turning brown). Mix together  baking soda and flour and add to the ingredients in the bowl. 2013-12-06 18.41.13Mix well until all of the flour is absorbed. Pour into 2 greased round pans  or one 9×13 pan. Bake for about 55 minutes in a preheated oven. 2013-12-06 18.47.18

My mistake; it was turning brown around the edges at 50 minutes and when I inserted a toothpick into the center it came out clean. I took it out of the oven to cool. I think another 5-10 minutes of cooking would have given a crisper texture. Mine was very moist-maybe too moist. I covered it with plastic wrap over night and the next day it was really almost soggy.

Today I tried Fresh Apple Cake also found on Facebook.

Ingredients:

1 cup vegetable oil

2 cups sugar

3 eggs

3 cups flour

2 teaspoons vanilla

1 teaspoon baking soda

1 cup chopped pecans

3 cups chopped apples

Preheat oven to 350. Grease a 9 x 13 pan. Combine oil, sugar, and eggs. 1386451471088

Stir in flour and baking soda. Add vanilla and pecans (I used the order in the previous recipe), stir in chopped apple. Spread in prepared pan. Bake 45-50 minutes. Cool for two hours. 2013-12-07 14.45.30

Prepare frosting.

Frosting:

1/2 cup butter

1 cup brown sugar

1/4 cup evaporated milk

1/2 teaspoon vanilla

Place in saucepan, bring to boil and boil for 2 minutes. 1386458617732Set pan in a bowl of ice water. Beat.                               (I used my electric mixer) until icing is a spreadable consistency (about 3 minutes) 1386459130046

This sounded more complicated than it was. Don’t over mix the frosting or it will not be spreadable.  Don’t over work the frosting  as when it cools it will harden slightly’

The results: The Fresh Apple Cake is  just what the name implies-apple cake. It is moist and flavorful. The brown sugar frosting is sweet and really enhances the flavor of the cake. It has an almost maple flavor. (I don’t care for maple and found this to be absolutely delicious).

The One Bowl Apple cake is less sweet. Would work best as a breakfast or brunch item. It might also be enjoyed by those who prefer a less sweet desert.
